Being a late night coffee shop, having a high-quality decaf coffee at the ready is absolutely crucial. “Death before Decaf” is one of the worst phrases to come out of the coffee community. To be so naïve as to disregard what can be a delicious coffee just without the caffeine as by default unfavorable is maddening and goes against everything we stand for at Midnight. We aim to roast approachable coffees that everyone can enjoy, even if you can’t or don’t drink caffeine.
And this decaf is both approachable and delicious. Sugarcane is readily available in Colombia, and its application to the coffee industry was a game-changer. Ethyl acetate is an organic compound found in sugarcane, and the decaffeination process happens when ethyl acetate bonds to acids in coffee that take the caffeine with it when flushed. It completely preserves the flavor of the coffee, keeps the integrity of the cellular structure of the bean, and sustainable with sugarcane grown near the coffee.
We’ve tasted espresso shots of this decaf that were pure fresh squeezed orange and chocolate, just those two flavor notes, simple and balanced. As a drip coffee vanilla enters that balance which rounds it out beautifully. We love decaf coffee, we love our decaf drinkers, and we love Twilight Time.
