Over the last decade the specialty coffee world has moved further and further from dark roast coffee offerings. Our philosophy has always been to create approachable coffees and for many people that means familiar flavors, which dark roast coffee typically has a lot of.
But beyond that we love the flavor of dark roast and the different ways the cellular structure of the bean changes throughout the roasting process.
Blackbirds Brew is unique in that it is a single origin dark roast coffee, and we use air flow manipulation to pack in as much smokey and dark flavor as we can without totally decimating the cellular structure of the bean. We slow air flow down substantially near the end of the roast which means the roast can end at a lower temperature and still have that bold dark roast coffee flavor. The low air flow holds particulate matter in the roast chamber that contributes to it’s unique dark profile. It’s also a super high elevation Peruvian coffee, high density, which helps hold that integrity through the end of the roast.
We started roasting this way because we heard someone on a podcast refer to it as something you should never do, so naturally we tried it. The success in the results speaks to a greater truth about our relationship to dark roast coffee within the specialty coffee industry.
Blackbirds Brew is the backbone of numerous dark roast offerings, our Midnight Espresso Blend and Naughty to name a few. As a single origin it is pure, unadulterated smokey, cedar, and chocolatey flavors.
