Nine Lives

This is it! Our most popular light roast coffee. This is the light roast drip we most frequently serve at our cafes. It’s the backbone of MANY of our blends, including our Cold Brew Blend, Midnight Espresso Blend, and Crimson. And it’s for good reason!

Naturally processed coffees like Nine Lives are dried around the seeds (the beans) on raised beds, allowing the coffee cherry to ferment and impart wild flavors into the coffee once its in the cup. These coffees are light, bright, and known to have blueberry, acai, and other dark fruit flavors due to the processing method.

Our goal with Nine Lives is to nail those dark blue fruit flavors, but try and reduce some of the unfavorable acidity by extending out the pre-maillard reaction phase during roasting. At it’s best, this method produces a flavor parallel with a dark chocolate covered almond AND blueberry fruit. It’s an incredibly unique flavor and we spare no expense purchasing high-quality Ethiopians from Genuine Origin to make sure it’s the profile we want.

Yirgacheffe is a well known coffee producing region with fertile clay soil, high elevation, and shade from many different varieties of native trees. This coffee was farmed using organic practices, and is genuinely great for any brewing method, french press being our favorite.
