Nocturnal Subscription

Nocturnal was the first light roast coffee we ever roasted back in the garage. It’s been many things over the years, a Colombian coffee, most recently a Costa Rica Honey Process, and now back to it’s roots of a clean, bright, exciting washed Guatemalan coffee grown in rich volcanic soil.

The Huipiles region is unique due to the dry, hot winds that come in from Mexico, which protect the coffee from frost and allow it to grow at much higher elevations. These higher elevations have numerous benefits but the lack of oxygen in the atmosphere slows down the growth process and creates different flavors and higher density.

The goal with Nocturnal has always been to create an approachable light roast coffee. Something that has acidity, but in a favorable way, you’ll taste some lemon zest in this coffee paired with green apple and caramel. They’re very familiar flavors, in a very clean coffee, which can help to understand clarity and balance. This is a great coffee for drip brewers.
